How many pork chops per package? Most people choose the number of people that will be eating them.
How thick would you like the pork chops to be? 3/4" is standard but we can cut them from 5/8" to 1 1/2"
Do you want the spare ribs? Most people want the spare ribs.
Do you want Boneless Country Style Ribs (BCSR)? How many pounds per package? BCSR are cut from one of the shoulder roasts (the Boston Butt). Most people choose 1 lb packages. If extras are wanted they can be cut from other shoulder roasts. They can be slow cooked in a crock pot with barbeque sauce. DELICIOUS!
How large would you like the shoulder roasts to be? Roast size is usually determined by the number of people that will be eating it. A good rule is 1/2 lb for each adult person.
Do you want shoulder steaks? Shoulder steaks are tougher than chops.
Do you want Seasoned Pork? Seasoned pork from the shoulders, loins, or hams. We rub the pork with our seasoning, slow cook the meat for 8 hours, and chill it. It can be whole as an easy roast or sliced for sandwich meat or Barbeque. $0.55 per lb extra.
Do you want (both) hams and bacons cured? The majority of people choose for all of the hams and bacons to be cured?
Do you want cured pork chops? Some people choose to have the pork chops cured, this is generally a good option for older boars. $0.50 per lb extra.
How many pounds do you want the ham roasts to be? If fresh hams are wanted (not cured) they are generally the same size as the shoulder roasts. Cured hams are generally cut a bit larger for special occasions.
Do you want ham steaks? If so how many per pack? These are similiar to the ham steaks you order in a restaurant . These are quite large and are generally one steak to 2 people. The entire cured ham can be cut into ham steaks if desired. They are difficult to cut on a fresh ham.
How many pounds do you want your sausage to be? Most people choose sausage in 1 lb packages.
Which flavor sausage would you like? Mild, Medium, or Spicy? This determines the amount of spice put into the sausage. Spicy does not mean hot ... only that there are more spices.
Do you want the sausage made into patties? We offer the sausage in 1/4 lb patties. Due to the small amount of sausage on a pig it is all or none.
Do you want the neck bones? These are used to make soup stock.
What thickness would you like the bacon? Thick, Medium, or Thin? How many pounds per package? This is personal preference. Most people choose 1 lb per pack. Usually there are 8 slices per lb on thick, 10 on medium and 12-14 on thin.
Do you want the ham hocks? These go well with beans or in soup. If not wanted they are ground into sausage while still fresh.
Do you want pork jerkey? This is in extruded only (ground then formed into sticks). Jerky is $5.00 per lb (wet weight).
