Chicken Tarragon

 

Chicken Tarragon

6 Boneless Skinless Chicken Breasts 1/2 c. Chicken stock
1 Tbsp butter
1/2 c. half & half
1 Tbsp Olive Oil Fresh Lemon
1 1/2 Tbsp Tarragon (minced)
Parsley
3 shallots (finely chopped) or 1/3 c white oninon. Salt & Pepper
1 1/2 Tbsp Tarragon (minced)

Instructions:

  • With a kitchen mallet, pound chicken breasts to 1/2" thickness.
  • Season with salt & pepper
  • Heat butter and olive oil in a non-stick skillet and add chicken. Cook each side until golden brown, about 4 minutes per side. Remove and cover.

For sauce:

  • Add shallots to pan and saute for 2 minutes.
  • Add tarragon and stir until fragrant.
  • Add stock slowly to deglaze pan; then add half &half.
  • Cook 3 minutes to reduce. Remove from heat.
  • Add a squeeze of lemon and salt and pepper to taste.
  • Serve over chicken.
